Introduction：
Glucoamylase (Glucan 1,4-α-glucosidase) is the world's largest production, the most widely used enzyme preparation which is made from Aspergillus niger through cultivation and extraction technique.This product can be used for the saccharification process the industry of alcohol, distillate spirits, beer brewing, organic acid, sugar,antibiotic and etc.Glucoamylase can catalyze the hydrolysis of starch. It decomposes alpha-1,4 heteroside from the non-reductive end of starch molecule so as to form glucose.

Definition of Activity:
1 unit of glucoamylase equals to the amount of enzyme which hydrolyzes soluble starch to get 1 mg glucose at 40 ºC and pH 4.6 in 1 hour.
Suitable condition:
The optimum temperature 58-60℃，PH value 4.0-4.5
Application range:
1. In production process of alcohol: add the enzyme at 60 °C in the rate of 80-200 u/g, at pH 4.2-4.5, keep for 30-60 minutes.
2. In production process of starch sugar: add the enzyme in the rate of 100-300 u/g at pH 4.2-4.5, keep at 60°C.
3. In production process of dry beer: add the enzyme before saccharification or fermentation, because it can improve the sugar degree of dry beer.
4. In brewing of liquor and manufacture of vinegar: substituting yeast with the enzyme can improve yield efficiency.
5. In manufacture process of gourmet powder, antibiotics, citric acid, and etc.: add the enzyme in the rate of 100-300U/g at pH 4.5 and 60°C.

The enzyme is the protein material, for the sensitive person, if suck the enzyme powder or droplet may cause allergy, and may stimulate the skin if last for long time, the eye and the mucous membrane tissue, may wear the mask to protect yourself.
Matters needing attention:
The enzyme is a biological activity material, easily suppressived destructived by oxidant and heavy metal((Fe3+,Cu2+.Hg+,Pb+ and so on)should avoid with its contacting. please storage in cool and dry place, prevents deterioration from damp, enzyme activity survival rate is 90% in 6 months.
