Dark red-purple powder, block, paste or liquid, with a slight special smell, tasteless. No moisture absorption. Soluble in water, easily soluble in propylene glycol aqueous solution below 50% and ethanol aqueous solution below 30%, showing bright purple-red color. Insoluble in absolute ethanol and oil. The pH of a 1% aqueous solution is 4.0 ± 0.5. The maximum absorption wavelength is 533nm. In the pH value range of 2.5 to 8.0, the color tone changes only ±5%, and the stability is good. When the pH value is above 6, the red color is slightly lighter. It does not fade when heated to 100°C. Good light resistance in the pH range of 4 to 6, with slight changes at pH 2.5 and 8. Precipitation is easy to occur below pH 3.5. It is stable to Al2+ and Ca2+, but unstable to Fe2+ and Sn2+ (especially in an aqueous solution with a pH value of about 4.6). Addition of cysteine hydrochloride enhances chroma. Salt has no effect on color value and hue. Good dyeability to proteins and carbohydrates.
